Note the last two rows. The imperial fluid ounce is smaller than the US one, but there are more of them in a pint, so an imperial pint is larger. This is exactly the sort of detail that ruins a scaled recipe.

Fuel economy

Miles per gallon and litres per 100 km are reciprocal, not proportional:

Because the relationship is reciprocal, equal gains in mpg are not equal gains in fuel saved. Going from 15 to 20 mpg saves 3.9 L per 100 km; going from 40 to 45 saves only 0.7. This is the reason regulators increasingly quote consumption per distance rather than distance per volume, since it makes the actual saving legible.

Most recipes round a cup to 240 ml and a tablespoon to 15 ml, which is close enough for cooking and not close enough for baking by weight. Where precision matters, weigh rather than measure by volume.

Common questions

Is a US gallon the same as an imperial gallon?

No, and the difference is large. A US liquid gallon is exactly 3.785411784 litres; an imperial gallon is exactly 4.54609 litres. The imperial gallon is about 20% bigger. A US gallon holds 16 US fluid ounces per pint and 8 pints; an imperial gallon holds 20 imperial fluid ounces per pint and 8 pints.

Which gallon does a recipe mean?

Almost always a US gallon if the recipe is American, and imperial if it is older British. The same ambiguity affects pints and fluid ounces, and it is the most common cause of a doubled or halved liquid quantity in a converted recipe. Check the origin of the recipe before scaling it.

How do I convert miles per gallon to litres per 100 km?

They are inversely related, so you divide rather than multiply: L/100km = 235.215 ÷ mpg for US gallons, or 282.481 ÷ mpg for imperial. A car doing 30 US mpg uses 7.84 L/100km. Because the relationship is reciprocal, improving from 20 to 25 mpg saves far more fuel than improving from 40 to 45.
